recipe of the week

This recipe is so easy you have no excuse not to make it this week. (except you Hilary. Not sure if you could make it for vegetarians:)

CHICKEN CORDON BLEU

4 skinless, boneless chicken breasts
salt
pepper
6 slices havarti cheese (or try swiss or cheddar)
4 slices black forest (or your favorite) ham
1/2 cup seasoned breadcrumbs

Preheat oven to 350 degrees. Coat a 7X11 baking dish with nonstick cooking spray.

Pound chicken breasts in between saran wrap with a rolling pin or (empty) wine bottle until 1/4 thick. Make sure they are thin enough, but not so thin that they fall apart.

Sprinkle each breast with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast into a little package and secure with toothpicks. Place in baking dish and pat breadcrumbs onto tops of each piece of chicken.

Bake for 30 minutes. Check to make sure the chicken is no longer pink inside. Top with 1/2 slice of cheese on top of each and bake for 3-5 minutes or until cheese is melted.
Serve!
